Tomato Chutney

A side dish that can be had as a side-dish with idlis/dosas.
Ingredients:
1) Tomato - (Medium-sized) - 2-3
2) Onion - (Medium-sized) - 1
3) Ginger - 2-3 pods
4) Green Chillies - 3
5) Curry leaves
6) Corriander leaves
7) Garam masala - 1 tsp
8) Corriander powder - 2 tsp
9) Chillie powder - 2 tsp
10) Black pepper powder - 2 tsp
11) Mustard seeds
12) Jeera(Cumin seeds) - 1 tsp
12) Salt - 1 tsp
13) Sugar - 1 tsp
14) Oil

Method of preparation:
1) Chop onion and tomatoes into small pieces. Chop ginger and green chillies into small pieces.
2) Heat oil in a frying pan. Fry the onions until they are slightly brown. Add in tomatoes, ginger and green chilles. Let it cook for 2-3 minutes. (For a tangy taste, add a 1/4 tsp of tamarind paste.)
3) Add in the curry leaves. Add sugar and salt to the mixture. Blend this mixture using a blender adding little water.
4) Heat oil in a frying pan. Add mustard seeds. Let it splutter out. Add cumin seeds. Add the masala powders one by one - garam masala, chillie powder, corriander powder and pepper powder.
5) Add the blended mixture to the above prepared masala powder mix. Mix it well.
6) Delicious tomato chutney is ready!
This can be stored in refrigerator for about 4 days.
